ChocPlot is a simple to use (although incomplete) collection of object that can be used to plot (x,y) data points. It is built on top of Apple's Cocoa but will also run under GNUstep.

Classes Overview:

AxisModel

MutableAxisModel

These two classes give a numerical representation of a linear axis. The mutable subclass gives additional methods for user control over the generated values.
